Caramel Apple Squares and a Birthday Weekend

This weekend was busy. We had the Baby’s birthday party on Sunday complete with Rainbow Cupcakes, Ham and Cheese Pretzel Bites, Chicken Wings, and BBQ Chicken Sandwiches. So, I was a little busy cooking and baking Sunday.

Sometime I’ll have to post some of those recipes. The Ham and Cheese Pretzel Bites were amazing, and even though the Rainbow Cupcakes were a bit of a pain to make they sure turned out cute. This was my first time piping on the frosting instead of just using a knife. It was fun! I’m excited to try my hand at some more cupcake recipes.

What I have for you today is to die for. These Caramel Apple Squares are seriously the best thing I’ve ever eaten. Okay. That’s a lie. But they are so good! They’re crazy easy to make, and the taste of the cinnamon mixed with sugar mixed with apples and then a homemade caramel sauce drizzled on top is pretty much awesome. If you don’t have homemade caramel sauce laying around, you can try this recipe, or you can always use store bought caramel or melt some Kraft caramels. Yum!

I found this recipe at My Baking Addiction. I’ve been making a lot of her recipes lately. From the mocha scones to a recipe for no knead pizza dough, I have not been disappointed.

Caramel Apple Squares

recipe slightly adapted from MyBakingAddiction

Ingredients:

  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup butter, melted
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup chopped apple
  • 1/8 cup white sugar
  • 2 tsp ground cinnamon

Directions:

  1. Preheat oven to 350 degrees, and grease a 9×13 inch pan.
  2. Sift together your flour, baking powder, salt, and cinnamon. Set aside.
  3. In a large bowl, mix your melted butter, brown sugar, and 1 cup of white sugar together until well blended. Mix in eggs and vanilla extract. Blend in the flour mixture until just combined. Then stir in apples.
  4. Spread the mixture evenly in greased pan. In a small bowl, mix your 1/8 cup white sugar with your 2 tsp cinnamon. Sprinkle over the top of your bars.
  5. Bake for 30-35 minutes until bars are golden brown and will spring back when you touch them.
  6. After bars cool, I then took my homemade caramel sauce (you could use any kind of caramel here), and drizzled over top.
  7. Enjoy!

    But seriously – Aaron isn’t kidding when he says those caramel apple bars are the best thing he’s ever eaten (like anyone can even know that)! Besides Emma staying overnight, they were the best part of the night. We won’t go into that disaster of a Monday Night Football game.

      They were pretty tasty. They are now in my fav folder for desserts. And so easy to make. Love it!
